Corn Chowder
10 servings
Ingredients:
Corn, frozen 1 lb
Onions, medium diced ½ onion
Celery, sliced 2 stalks
Red Pepper, small dice ½ pepper
Bacon, cooked, chopped 2 strips
Red Skin Potatoes, diced 3 potatoes
Parsley, chopped ¼ cup
Water 2 quarts
Chicken Base 7oz
Heavy Cream 1 cup
Salt & Pepper as needed
Corn Starch Slurry as needed
Procedure:
Put broccoli in large pot with onions, celery, red peppers, potatoes,
water, & chicken base, Bring to a boil and turn down to a simmer,
Cook for 20 minutes, puree with immersion blender or place ¾ of
soup in regular blender and puree. Return to pot, add Heavy Cream, adjust
consistency with corn starch slurry and seasoning with salt & pepper
to taste.
