Curried Rice Pilaf
Yields quantity

Ingredients:

¼ # butter
1 medium onion, diced medium
2 cups Rice (use brown or long grain)
¼ cup of curry powder
1 t. black pepper
1 t. thyme
1 quart of hot chicken stock


Procedure:

1. Sauté onions in butter until translucent add rice and continue to sauté until rice is light brown and has a nutty aroma.
2. Add curry, pepper & thyme to chicken stock, stir until dissolved, add to rice.
3. cover and reduce heat to lazy simmer until liquid is absorbed and rice is tender. Do not over cook.
