Grilled Apricot Honey & Lime Pork Tenderloin


INGREDIENTS:

½ Cup Apricot Preserves
1 garlic clove, minced
1 tablespoon yellow prepared mustard
2 tablespoons honey
2 tablespoons fresh lime juice
1 teaspoon grated lime peel
Cornstarch Slurry (equal parts of water and cornstarch the consistency of heavy cream)
Salt & Pepper to taste
1 whole pork tenderloin, approx. 1 pound
Combine apricot preserves, garlic, mustard, honey, lime juice, lime peel, salt, and pepper in sauce pan, bring to a simmer. Add corn starch slurry and stir until thickened slightly, set aside for basting during grilling process. Season tenderloin very good with salt and pepper and place on an oiled grill on medium high heat. Grill for 7 to 8 minutes per side, or until done. Serves 2-3.
