Hash Brown Casserole

2 Lbs. frozen, country-style hash browns
salt - to taste
pepper - to taste
2 cups sour cream
2 cups of chicken veloute
1/2 cup butter or margarine
1/2 cup chopped onion
2 cups grated cheddar cheese
-Place potatoes in a greased 9" X 13" pan.
-Season with salt and pepper.
-In a bowl, combine minced onions, sour cream, and cream of chicken soup.
-Pour soup mixture over potatoes; sprinkle with cheddar cheese and melted butter.
-Bake in 350 degree oven for 45 minutes, or until all is completely warm, and
the cheese begins to melt.
