Hot Rolls
Yield 25 portions
Ingredients
Yeast 2T
Warm Water (100-105 degrees) ½ c
Cold Water 1 ½ c
Sugar ¼ c
Salt 2t
Bread Flour 5-6 cups, as needed to form a soft, non-sticky ball
Milk, Non Fat Dry 1T
Shortening ½ c
Method
You can use a warm oven set on low to act as the proofer
1. Sprinkle yeast over warm water, add a couple pinches of sugar to the water
to "feed" the yeast and give it a kick-start. Stir together well.
Let set 5 minutes & stir again.
2. While yeast is "growing", place cold water in mixer bowl, add
sugar and salt and stir together well. Add yeast solution, stir again to combine
wet ingredients
3. Add flour and milk to the liquid mix. Using the dough hook, mix at low speed
for 1 minute, or until flour is incorporated into the mix. This can take up
to 3 minutes.
4. Add shortening and mix at medium speed 10 minutes or until dough is smooth
and elastic. Dough temperature should be 78-82 degrees.
5. FERMENT: Transfer dough into a large bowl coated with a light amount of
oil or cooking spray. Cover dough and put in a warm place (90 degrees). Let
rest there 1 ½ hours or until doubled in size.
6. PUNCH: Divide dough into 4 even pieces, shape each into smooth balls, let
rest for 10-20 minutes (covered).
7. Roll each piece into a long rope and cut even pieces about 2 inches thick,
shape into balls about 1 ½ ounces, place on a lightly greased sheet pan
8. PROOF: At about 90 degrees until doubled in size, approximately 1 hour
9. BAKE: At 350 for 15-20 minutes or until golden brown. Brush tops with melted
butter. Serve warm! Use 325 degrees for Cinnamon Rolls and 400 for pizza.
This recipe is great for pizza dough, cinnamon rolls, orange rolls, and any
