  Pepper Steak
10 servings


Ingredients:

Beef Slices 1.5 #
Green Peppers, sliced 1 each
Yellow Onions, sliced ½ of a small onion
Garlic, minced 1 t
Water 1 quart
Beef Base 2 T
Catsup 4 oz
Kitchen Bouquet 1 t
Salt & Pepper as needed
Cornstarch slurry as needed


Procedure:

Sauté beef strips in hot oil until all sides are brown add onions and peppers and continue to cook until onions are translucent, add garlic and sauté a minute longer. Add Water, beef base, catsup, kitchen bouquet and Salt and Pepper, bring to a boil and reduce to a simmer. Allow to simmer for 20 minutes, skimming the foaming raft that forms on the surface of the liquid. Thicken with cornstarch slurry to Nape consistency. Adjust seasoning if needed. Serve over steamed rice.
