Plain Cheesecake
Yield: 16 Servings per cake (minimum)
Crust
" 1 ½ cup graham cracker crumbs
" 4 tablespoons melted butter or diet margarine
" 3 oz Sugar
" 3 oz egg WHITES
Filling
4 Cakes 1 Cake
12 med 4 med Eggs
½ C + 1 T 3 tb Flour
4 ½ C 1 1/2 c Sugar
½ C + 1T 3 tb Cornstarch
6 lbs 2 lbs Cream cheese, softened
2T 2 ts Vanilla
Zest of 3 Lemons Zest of 1 lemon
Fruit topping optional
Directions:
Soften Cream Cheese in Microwave for 2 ½ minutes. Cream softened cream
cheese with sugar, lemon zest flour, vanilla & corn starch until smooth.
add eggs to cream cheese mix a 1 at a time while machine is mixing on low speed.
Pour into fully cooked shell in a lightly greased spring form mold pan to the
½ way point!, place on sheet pan & bake @ 325 degrees for 1 hour,
after 1 hour rotate sheet pan, reduce heat to 300 and bake an additional 45
minutes or until done. Cool fully before slicing.
