Sautéed Pork Tenderloin with Lemon Lime Sauce


INGREDIENTS
1 pork tenderloin (10 to 14 ounces)
Salt and pepper
1 tablespoon butter
1 tablespoon canola oil
2 clove garlic, crushed
2 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
1 tablespoon Dijon style mustard

Cut tenderloin into 8 pieces and medallions and season with salt and pepper. Heat butter and oil in large skillet; add pork and cook uncovered over medium heat until cooked through (10-12 minutes total time). Remove pork allow to rest while making sauce. For Sauce: Add garlic to pan juices and sauté for 45 second to 1 minute making sure NOT to burn the garlic; then add lemon juice, lime juice, and mustard. Heat until sauce begins to bubble, stirring often. Adjust seasoning with salt and pepper as needed. Serve sauce over pork with wild rice pilaf and fresh sautéed vegetables. Serves 2 to 4.
