  Shrimp Scampi Farfalle & Vegetables
20 servings


Ingredients:

Bowtie Pasta, cooked, cooled and oiled 1.5 #
Whole butter 4 oz
Red onions, small diced ½ small onions
Garlic, minced 1 t
Parsley 1 T
Lemon Juice 1 T
Roma Tomatoes, small diced 1 small
Zucchini, large diced 1 small or ½ large Yellow Squash, large dice 1 small or ½ large
Shrimp, raw, P & D 51-60's 1#
Salt and Pepper as needed

Procedure:

Melt butter in tilt grill, add all vegetables and sauté until onions are translucent add shrimp and cook to ¾ done, add cooked pasta and toss until warmed. Season with salt and pepper and lemon juice, serve hot.
